Mint/Serrano Pepper Simple Syrup

  • 1 cup sugar
  • 1 cup water
  • 2 serrano chile peppers, sliced
  • ¼ cup fresh mint, torn
  1. Bring the water to a boil, then add the sugar. Stir it until the sugar is completely dissolved.
  2. Let the syrup cool.
  3. Blend everything until it's well mixed.
  4. Strain the syrup through a sieve or fine mesh strainer. Repeat this step until the syrup is completely separated from the pepper and mint pieces.
  5. Bottle the syrup.
  6. Label and date the bottle.
  7. Store it in the refrigerator for use as desired.
