Classic Rib Sauce

Serves: 3 cups
 
This rib sauce has a touch of heat, a bit of smoke and a lot of flavor.
Ingredients
  • 2 cups ketchup
  • ⅓ cup brown sugar, packed
  • ¼ cup minced onion
  • 2 tablespoons olive oil
  • 2 tablespoons water
  • 5 cloves smoked garlic, pressed (about 1 tablespoon)
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon liquid smoke
  • 1 teaspoon dry mustard
  • ½ teaspoon ground cayenne
  • Freshly ground pepper, to taste
Instructions
  1. Purée the onion and water in a small food processor.
  2. Heat a medium sauce pan over a medium heat. Add the olive oil. When the oil begins to simmer, add the onion purée.
  3. Simmer until slightly browned. Add the remaining ingredients.
  4. Mix thoroughly and simmer, stirring frequently, for about 20 minutes.
