St Patrick’s Day Pizza and Leprechaun Pie

Over the last year or so, I’ve delved deeply into the world of pizza. It’s culminating with the Pizza Trivia book I’m writing with Dave and Lois. Maybe that’s why I got the notion in my head yesterday to put together a Saint Patrick’s Day pizza of my own. As much beer as people put away for the holiday, a themed pizza seemed a natural.

The idea was to take traditional corned beef away from the crock pot and onto some flat bread, then supplement it with some Irish white cheddar cheese. Going into this, I thought, “This is either gonna be great or it’s gonna fully suck.” Lucky for me, it turned out pretty good. If it hadn’t, you wouldn’t be reading about it right now.

Irish Pizza
2 slabs of Naan bread
1/3-1/2 lb sliced deli corned beef, chopped
1 1/2 cup grated Irish white cheddar cheese
Smoken’ Jacks Jalapeno Mustard spread

Make sure you prep everything before you start cooking. I pan-fried a slab of naan bread on one side, flipped it, then spread the hot side with the mustard, layered it with the corned beef, then coated that with the cheese. Then, you’ll want to return it to the heat, cover it, and let it cook for 3-5 minutes (just long enough for the cheese to melt, but not long enough to char the bottom). The Smoken’ Jacks worked great. It’s a bit of a chunky mustard that adds a nice kick of heat to the pizza, a touch of sweetness, and some smoky flavor that goes great with the cured corned beef.

Bonus: Leprechaun Pie
1 chocolate crumb pie crust
1 quart of mint chocolate chip ice cream
half a box of Thin Mint Girl Scout cookies

If you want a fun dessert item to go with the pizza, try this. Let the ice cream soften on the counter for 20 minutes or so, then spread enough of it into the crust with a spatula to fill it. Layer the top with a bed of the Thin Mint cookies, then re-freeze the pie in your freezer unit (this should take an hour or less). If you want to go crazy with it, you could drizzle Chipotle Hot Fudge on it, like that sold by Prairie Thyme or the Mint Fudge made by Sweet & Saucy.
